2 kg large shrimp with shells (or 1 kg peeled)
Juice of 2 white lemons
Salt to taste
5 cloves garlic, mashed
1 small can of extra virgin olive oil
2 medium onions, chopped
4 tomatoes, peeled and seeded, chopped
1 ½ tablespoons annatto powder (colorau)
1 box (520 g) tomato sauce with parsley and basil flavor
2 tablespoons beef flavor seasoning powder
15 leaves basil, chopped
200 g butter
250 g cream cheese
1 can (400g) evaporated milk (or heavy cream)
2 tablespoons cornstarch
2 bunches cilantro, chopped
2 bunches green onions, chopped

Preparation method
- Wash the shrimp well and marinate in lemon juice and salt for about 20 minutes
- Rinse the shrimp again and drain completely
- In a large pan, sauté the mashed garlic in olive oil until golden
- Add the chopped onion, annatto powder, and chopped tomato
- Cook until the onion softens
- Stir in the tomato sauce, seasoning powder, and chopped basil
- Add the butter and shrimp to the pan
- Cook over low heat for approximately 30 minutes, stirring occasionally
- Add the cream cheese and cook for about 10 minutes, stirring until the sauce thickens
- If necessary, dissolve the cornstarch in a little of the sauce removed from the pan and add it to the mixture, cooking for another 3 minutes
- Add the chopped cilantro and green onions
- Turn off the heat and stir in the evaporated milk (or heavy cream)
- Mix gently until a homogeneous cream is obtained
