Where to find ingredients
Black beans can be found in the dried beans aisle of most supermarkets. Frozen and salted pork loin, along with lean dried beef, are often available in the ethnic or international food sections of larger supermarkets, or more reliably at Latin American or Brazilian specialty stores. Fresh green herbs like parsley and scallions are available in the produce section of any supermarket. Salt-free light margarine is available in the dairy or butter aisle.
Preparation method
- Soak the black beans in water overnight
- The next day, soak the salted meats in water, changing the water several times
- Boil the salted meats in clean water and discard the water
- Repeat the process of boiling and discarding water until the meats are less salty
- Boil the meats again in clean water
- If the water becomes greasy, place it in the freezer or refrigerator
- the solidified fat on the surface can be removed with a spoon
- Use this cooking water to cook the beans
- In a pot, cook the black beans with the desalted meats and bay leaves until the beans and meats are tender
- While the beans are cooking, prepare a sauté in a non-stick skillet with the light margarine
- Add the chopped onion and sauté until translucent
- Add the minced garlic and sauté for another minute
- Add the chopped green herbs to the sauté
- Add this sauté to the pot with the beans
- Check the salt and adjust if necessary
- Serve the feijoada hot
Observations
Feijoada is one of the most emblematic dishes of Brazilian cuisine, a rich and flavorful stew of black beans with various meats. This "light" version adapts the traditional recipe to be lighter, using lean cuts of meat and techniques that reduce fat content without compromising its characteristic flavor.
It's a great option for those who want to enjoy this Brazilian classic in a healthier way, ideal for a weekend lunch or a comforting meal. The preparation involves desalting the meats and cooking everything together until it reaches the perfect consistency.
