Where to find ingredients
Okra, ginger, garlic, cornmeal, all-purpose flour, cumin, coriander, cayenne pepper, olive oil, and salt can be found in most supermarkets and grocery stores.
Preparation method
- Preheat oven to 200 ºC
- Wash the okra under running water, drain, and dry them very well with a clean kitchen towel
- this step is essential to ensure they become crispy
- Cut the okra in half lengthwise
- In a large bowl, combine the olive oil, ginger, garlic, cumin, coriander, cayenne pepper, and a little salt
- Add the cut okra to the mixture and stir well so that all pieces are coated with the seasonings
- Sprinkle the cornmeal and all-purpose flour over the okra and mix again to distribute the flour evenly
- Spread the pieces on a large baking sheet, preferably non-stick, leaving some space between them
- Bake for approximately 30 minutes, remembering to turn or stir the okra halfway through to ensure even browning
- Remove from oven once golden brown and serve immediately
Observations
This recipe transforms okra into a surprisingly textured snack or side dish. The secret is to keep the vegetables very dry before seasoning and to use the flour mixture to ensure crispiness in the oven.
