Where to find ingredients
Fresh corn can be found at most grocery stores and farmers' markets. All-purpose flour, milk, eggs, and Parmesan cheese are widely available at supermarkets.
Preparation method
- Wash the corn ears thoroughly and remove all silks
- Cut the kernels off the cobs with a knife and reserve in a bowl
- Place the corn kernels and milk in a blender
- Blend the mixture well
- Add the flour to the blender
- Blend again to incorporate
- Pass the mixture through a fine-mesh sieve to remove the pulp
- Transfer the liquid to a saucepan and heat over low heat
- Stir constantly until thickened to prevent lumps
- Transfer the cream to an oven-safe dish and let it cool completely
- Mix the egg yolk into the cooled dough
- Work the dough with floured hands
- Shape the dough into long cylinders on a lightly floured surface
- Cut the cylinders into small pieces, the traditional gnocchi size
- Cook the pieces in boiling water until they float to the surface
- Remove the gnocchi from the water and place in a serving dish
- Cover with your preferred sauce
- Finish by sprinkling grated Parmesan cheese on top
- Bake just long enough to melt and brown the cheese
Observations
This recipe uses fresh corn to create a light and delicious dough. The secret is constant stirring to reach the ideal consistency before shaping and finishing in the oven.
