Orange and Rosemary Marinated Chicken Breast

Ingredients

1 cup fresh orange juice, strained
1 clove garlic
1 sprig fresh rosemary
2 tablespoons olive oil (divided)
2 chicken breasts (approx. 200g each)
2 teaspoons cornstarch
Salt to taste
Freshly ground black pepper to taste

Method

  1. Crush the garlic clove with the side of a knife to peel it
  2. Mix the garlic, rosemary sprig, orange juice, and 1 tablespoon of olive oil in a bowl
  3. Submerge the chicken breasts in the marinade
  4. Cover the container and let it rest for 20 minutes at room temperature
  5. Remove the chicken breasts from the liquid using tongs
  6. Drain the excess liquid well
  7. Pat the surface of the chicken breasts dry with paper towels
  8. Heat a large skillet over medium heat
  9. Add the remaining tablespoon of olive oil to the skillet
  10. Season the chicken breasts with salt
  11. Place the chicken breasts in the skillet with the smoother side facing down
  12. Sear each side for 2 minutes
  13. Lower the heat to the minimum setting
  14. Cook for another 3 minutes on each side until fully cooked through
  15. Pay attention to the thickness of the meat to ensure it is cooked through without burning
  16. Mix the cornstarch into the leftover marinade liquid and season with salt and pepper
  17. Transfer the chicken breasts to a plate and set aside
  18. Pour the marinade into the still-hot skillet over low heat
  19. Scrape the bottom of the skillet with a silicone spatula to release the browned bits
  20. Stir the sauce continuously for 3 minutes until it thickens
  21. Pass the sauce through a sieve to remove garlic and rosemary residues
  22. Serve the chicken breasts drizzled with the prepared sauce
