Sole in White Wine Sauce

Ingredients

1.5 kg sole fillets
Wheat flour (for dredging and for the sauce)
150 grams butter
1 cup white wine
Salt to taste
Black pepper to taste
Thyme to taste

Where to find ingredients

Sole fillets can be found at local fish markets or the seafood section of well-stocked supermarkets. Choose dry white wines like Sauvignon Blanc or Pinot Grigio for the best flavor profile. Fresh herbs like thyme are typically available in the produce section.

Preparation method

  1. Lightly dust the fish fillets in the wheat flour
  2. Sear the fillets in a frying pan using half of the butter
  3. Transfer the fish to a preheated earthenware baking dish
  4. Stir a tablespoon of wheat flour into the remaining butter in the pan
  5. Allow the flour to toast slightly
  6. Add the white wine
  7. Season with salt
  8. Add black pepper and thyme to taste
  9. Cook for 3 minutes
  10. Stir the sauce continuously while cooking
  11. Pour the hot sauce over the sole fillets and serve

Observations

This recipe prepares the fish elegantly by searing the fillets in butter and finishing them with a reduced sauce made of white wine and herbs.
