Ingredients
3 cups all-purpose flour
1 1/2 cups mayonnaise
2 large eggs
2 teaspoons salt
1 to 3 tablespoons water
3 tablespoons olive oil
1 medium grated onion
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
100g chopped black olives
300g chopped palm hearts
1 chopped tomato
Fresh herbs (like parsley and chives), to taste
1 box heavy cream
1 tablespoon cornstarch
Salt, to taste
1 egg yolk, for brushing

Preparation method
- In a bowl, mix the flour, mayonnaise, eggs, and salt
- Add water gradually, if necessary, until you get a smooth and pliable dough
- In a skillet, heat the olive oil and sauté the grated onion until golden
- Add the chopped bell peppers, chopped palm hearts, chopped olives, and chopped tomato
- Cook over medium heat for approximately 5 minutes, stirring occasionally
- In a small container, dissolve the cornstarch in a little water or in the heavy cream itself to avoid lumps
- Add the heavy cream and the dissolved cornstarch to the skillet with the filling
- Cook for another 3 minutes, stirring constantly, until the sauce thickens
- Season with salt to taste and add the chopped fresh herbs
- Remove the filling from the heat and let it cool completely
- In a pie dish, line the bottom and sides with half of the dough
- Fill with the cooled palm heart filling
- Cover the pie with the remaining dough, sealing the edges well
- Brush the surface with the beaten egg yolk
- Bake in a preheated oven at 180°C (350°F) for about 50 minutes, or until golden brown
