Creamy and Easy Shrimp Bisque

Ingredients

1 kg shrimp, cleaned and peeled
1 pot of creamy cheese spread (Catupiry-style)
1 box of heavy cream
1 medium onion, grated
1 clove garlic, mashed
Olive oil, to taste
Salt, to taste
Grated Parmesan cheese for gratinating (optional)

Where to find ingredients

Shrimp: Available at the seafood counter of most supermarkets, fish markets, or specialty seafood stores.
Creamy cheese spread (Catupiry-style): Look for this in the dairy section of large supermarkets, or in Latin American or Brazilian specialty food stores. If unavailable, a very thick cream cheese or a good quality Neufchâtel cheese can be used as a substitute, though the texture and flavor will differ slightly.
Heavy cream: Found in the dairy section of supermarkets.
Onion and garlic: Available year-round in the produce section of supermarkets and local markets.
Olive oil: Available in the cooking oil aisle of supermarkets.
Salt: Available in the spice or cooking aisle of supermarkets.
Parmesan cheese: Available in the dairy or cheese section of supermarkets.

Preparation method

  1. Season the shrimp with salt and garlic
  2. Set aside
  3. In a pan, heat a drizzle of olive oil and sauté the grated onion until translucent
  4. Add the seasoned shrimp to the pan with the onion and cook for a few minutes, just until they change color
  5. Remove the shrimp and set aside in a baking dish
  6. In the same pan, add a little more olive oil if needed, and the creamy cheese spread
  7. Stir until it begins to melt
  8. Incorporate the heavy cream into the cheese spread, mixing well until a homogeneous cream is obtained
  9. Adjust salt to taste
  10. Pour the hot cream over the reserved shrimp in the baking dish
  11. If desired, sprinkle grated Parmesan cheese on top
  12. Place in a preheated oven at high temperature to gratinate for about 10-15 minutes, or until golden brown
