Easy and Delicious Coffee Swiss Roll

Ingredients

5 eggs
5 tablespoons sugar
2 tablespoons cocoa powder
1 tablespoon granulated instant coffee
4 to 5 tablespoons all-purpose flour
Margarine for greasing
1 can (approx. 300g) heavy cream, strained
200 g semi-sweet chocolate bar, chopped
1/2 tablespoon instant coffee
1 teaspoon rum (optional)
Sugar for dusting
Mint leaves for garnish
Cherries for garnish

Where to find ingredients

Heavy cream and semi-sweet chocolate can be found in the dairy and baking aisles of most supermarkets. Instant coffee is available in the coffee and tea section. Cocoa powder and all-purpose flour are standard baking staples. If you can't find rum, you can omit it or substitute with a bit of strong coffee or vanilla extract. Fresh mint and cherries are typically available in the produce section or at local markets. For a wider selection of specialty baking ingredients, consider looking in gourmet food stores or dedicated baking supply shops.

Preparation method

  1. Beat the egg whites until stiff peaks form in a mixer
  2. Gradually add the egg yolks and sugar to the stiff egg whites, continuing to beat until a homogeneous mixture is obtained
  3. Remove the mixture from the mixer
  4. In a separate bowl, sift together the cocoa powder, instant coffee, and all-purpose flour
  5. Gently fold the dry ingredients into the egg mixture, alternating with a little coffee if necessary to adjust consistency
  6. Grease a rectangular baking pan and line it with parchment paper, also greasing the paper
  7. Pour the batter into the prepared pan and bake in a preheated oven at medium temperature
  8. While the cake bakes, prepare the filling: heat the heavy cream in a double boiler
  9. Add the chopped chocolate to the heated heavy cream and stir until the chocolate is completely melted and the mixture is smooth
  10. Incorporate the rum (if using) into the filling and mix well
  11. Set the filling aside
  12. Remove the Swiss roll from the oven and immediately invert it onto a clean, dry kitchen towel that has been previously dusted with sugar
  13. Roll up the Swiss roll while still warm in the towel and let it cool completely
  14. Carefully unroll the cooled cake
  15. Spread half of the filling over the cake
  16. Roll up the Swiss roll again, this time with the filling inside
  17. Cover the Swiss roll with the remaining cream
  18. Decorate with mint leaves and cherries
  19. Refrigerate for at least 30 minutes before serving
