Traditional Onion Chicken (Frango Acebolado)

Ingredients
1 kg boneless, skinless chicken thighs
3 cloves garlic, minced
1/4 cup (60 ml) vinegar
3 bay leaves
Salt to taste
1 tablespoon vegetable oil
2 medium onions, sliced
2 ripe tomatoes, sliced
1 tablespoon dried oregano
1/2 tablespoon crushed red pepper flakes (optional)
1/2 liter (2 cups) chicken broth
1/2 cup (120 ml) chopped fresh herbs (parsley and chives)

Preparation method
