Jiló (bitter eggplant) can usually be found in the produce section of large supermarkets, specialty Latin American or international food stores, or at farmers' markets. If unavailable, substitute with regular eggplant, but be aware the flavor and texture will differ.
Preparation method
- Wash and slice the jilós into thin rounds
- In a saucepan, heat the butter over medium heat
- Sauté the onion and garlic until golden
