6 medium jilós (bitter eggplant)
1 medium onion, chopped
2 cloves garlic, minced
1 medium tomato, chopped
2 tablespoons butter
Salt to taste
1 whole egg
Grated parmesan cheese, to taste

Preparation method

  1. Wash and slice the jilós into thin rounds
  2. In a saucepan, heat the butter over medium heat

  12. Bake in a preheated oven at 180°C (350°F) for approximately 20-25 minutes, or until golden brown and the jiló is tender
