Ingredients

2 tablespoons oil
800 g flank steak
Salt to taste
1 sprig of rosemary
4 cloves garlic, minced
1 onion, chopped
Thyme to taste
1 tablespoon tomato paste
1 can of beer

Preparation

  1. Clean the flank steak and season the meat thoroughly with salt
  2. Heat the oil in a pot and add the rosemary sprig to infuse the flavor
  3. Place the meat in the pot and sear all sides until they are well browned
  4. Add the garlic, onion, and thyme to the pot
  5. Sauté the vegetables for about 3 minutes
  6. Pour the beer and tomato paste over the meat
  7. Maintain over low heat for 30 minutes
  8. Check the liquid level and add hot water little by little if necessary to keep it cooking
  9. Remove the meat from the pot and keep it warm
  10. Strain the remaining sauce left in the pot
  11. Return the sauce to high heat to reduce until it reaches the desired consistency
  12. Slice the meat, arrange it on a platter, and drizzle with the reduced sauce before serving
