Where to find ingredients
You can find flank steak at your local butcher shop or in the meat section of most supermarkets. Fresh herbs like rosemary and thyme are usually available in the produce aisle, and beer can be found in the beverage section of grocery stores.
Preparation
- Clean the flank steak and season the meat thoroughly with salt
- Heat the oil in a pot and add the rosemary sprig to infuse the flavor
- Place the meat in the pot and sear all sides until they are well browned
- Add the garlic, onion, and thyme to the pot
- Sauté the vegetables for about 3 minutes
- Pour the beer and tomato paste over the meat
- Maintain over low heat for 30 minutes
- Check the liquid level and add hot water little by little if necessary to keep it cooking
- Remove the meat from the pot and keep it warm
- Strain the remaining sauce left in the pot
- Return the sauce to high heat to reduce until it reaches the desired consistency
- Slice the meat, arrange it on a platter, and drizzle with the reduced sauce before serving
Notes
This recipe transforms simple beef cuts into a sophisticated meal. The secret is to brown the meat well before starting the slow cook with the sauce.
