Shrimp Bobó

Ingredients

1 kg fresh shrimp
Salt to taste
3 cloves garlic, minced and crushed
1 lemon, juiced
Black pepper to taste
1 kg cassava, peeled
1 onion, sliced into rounds
1 bay leaf
2 onions, grated
6 tablespoons olive oil
2 bottles coconut milk
2 cans tomato sauce
1 bunch fresh parsley and scallions (cheiro-verde), chopped
2 green bell peppers, chopped
2 tablespoons palm oil (dendê oil)

You can find fresh shrimp at local fish markets or seafood counters. Cassava (yuca), coconut milk, and palm oil are typically available in the produce and international aisles of well-stocked supermarkets or specialty Latin American grocery stores.

Method

  1. Wash the shrimp well
  2. Season them with salt
  3. garlic
  4. pepper
  5. and lemon juice
  6. Let them marinate for a few minutes
  7. Cook the cassava in a pot with water
  8. the bay leaf
  9. and the sliced onion
  10. When the cassava is very soft
  11. add one of the bottles of coconut milk
  12. Let the mixture cool slightly and blend everything in a blender until you have a smooth cream
  13. Heat the olive oil in a large pot and sauté the grated onion until golden
  14. Add the seasoned shrimp and sauté until they change color
  15. Add the tomato sauce
  16. chopped herbs
  17. and green bell peppers
  18. Cook for a few minutes
  19. Stir in the blended cassava cream
  20. the second bottle of coconut milk
  21. and the palm oil
  22. Bring to a boil
  23. Turn off the heat once it is thoroughly heated through
