25 g of fresh yeast
100 ml of vegetable oil
1 teaspoon of salt
2 tablespoons of brown sugar
1 cup of rolled oats
1/2 cup of wheat germ
1/4 cup of flaxseed
2 cups (requeijão measure, approx. 240ml each) of whole wheat flour
All-purpose flour (enough to reach the right consistency)
25 g of fresh yeast
100 ml of vegetable oil
1 teaspoon of salt
2 tablespoons of brown sugar
1 cup of rolled oats
1/2 cup of wheat germ
1/4 cup of flaxseed
2 cups (requeijão measure, approx. 240ml each) of whole wheat flour
All-purpose flour (enough to reach the right consistency)
Where to find ingredients
Look for whole wheat flour, rolled oats, wheat germ, and flaxseed in the baking aisle of most supermarkets. Fresh yeast can often be found in the refrigerated section of larger supermarkets or specialty baking stores. Vegetable oil and brown sugar are common pantry staples. If you can't find fresh yeast, you can substitute with active dry yeast; use about half the amount (around 12-15g) and activate it in the warm water with sugar first.
Preparation method
- In a large bowl, dissolve the fresh yeast in the warm water
- Add the brown sugar and mix well
- Add the vegetable oil, salt, rolled oats, wheat germ, and flaxseed
- Gradually incorporate the whole wheat flour, mixing until a homogeneous dough is obtained
- Add more all-purpose flour, little by little, until the dough no longer sticks to your hands but is still soft
- Transfer the dough to a clean, floured surface
- Knead the dough vigorously for about 10 to 15 minutes, until it becomes smooth and elastic
- Place the dough in a lightly greased or floured bowl, cover with a cloth, and let it rise in a warm place until doubled in volume (approximately 1 to 2 hours)
- After rising, shape the loaves as desired
- Arrange the shaped loaves in a greased and floured loaf pan, or one lined with parchment paper
- Cover the loaves again with a cloth and let them rise for another 30 to 60 minutes
- Preheat the oven to 200°C (400°F)
- Bake the loaves in the preheated oven at 200°C (400°F) for approximately 25 to 30 minutes, or until golden brown and cooked through
- The time may vary depending on your oven
- Remove the loaves from the oven and let them cool on a wire rack before serving
