Ingredients

1 whole chicken cut into medium pieces
4 tablespoons oil or olive oil
Salt to taste
Black pepper to taste
1 large onion, chopped
3 cloves garlic, minced
1/2 green bell pepper, chopped (optional)
2 tomatoes, peeled and seeded, chopped
1/2 teaspoon ground saffron or 2 sachets of powdered seasoning with saffron
2 cups rice
4 cups hot water
1/4 cup chopped fresh herbs (parsley and chives)

Preparation method

  1. Season the chicken pieces with salt and black pepper to taste

  12. Once boiling, reduce the heat, cover the pot, and cook for approximately 15 to 20 minutes, or until the rice is cooked and the water has been absorbed
  13. Check if the chicken is well cooked
  14. Turn off the heat, stir in the chopped fresh herbs
  15. Let the galinhada rest, covered, for 5 minutes before serving
