Ingredients

200 g cornmeal
2 tablespoons cassava flour
1 can sardines (in oil, drained)
1 can peas (drained)
3 hard-boiled eggs
2 tablespoons chopped fresh cilantro and parsley mix (cheiro-verde)
10 chopped black olives
5 chopped tomatoes
4 chopped palm hearts
1 can tomato sauce
250 g shrimp
Water and salt to taste for the sauce

Where to find ingredients

Cornmeal, cassava flour, canned sardines, canned peas, olives, palm hearts, and tomato sauce can be found in the aisles of most supermarkets. Fresh shrimp can be purchased at the seafood counter of your local grocery store or fish market. Fresh herbs like cilantro and parsley are typically available in the produce section of supermarkets.

Preparation method

  1. In a saucepan, combine the chopped tomatoes, black olives, chopped palm hearts, peas, tomato sauce, and shrimp
  2. Cook the ingredients over medium heat, adding water and salt to taste, until a dense and flavorful sauce forms
  3. In a separate bowl, mix the cornmeal and cassava flour
  4. Gradually pour the hot sauce over the flours, mixing continuously, until a moist and homogeneous consistency is achieved
  5. Preheat a steamer pot (cuscuzeiro)
  6. Place the mixture in the steamer pot, shaping the cuscuz
  7. Garnish the top with the hard-boiled eggs and canned sardines
  8. Steam the cuscuz in a double boiler over low heat for approximately 20 to 30 minutes, or until firm and cooked through
  9. Serve hot, garnished with the chopped fresh cilantro and parsley mix
