500 g smoked calabresa sausage

Purchase cowpea beans, fresh bacon, smoked calabresa sausage, onions, fresh parsley, cilantro, and cassava flour at your local grocery store or market.
Preparation method
- Cook the cowpea beans in a pressure cooker for approximately 9 minutes after it starts to hiss, or until tender
- While the beans cook, chop the fresh bacon into small cubes
- Chop the onion, fresh parsley, and cilantro
- Cut the calabresa sausage into slices or cubes
- In a separate pan, fry the bacon until golden and set aside
- In the same pan where the bacon was fried, fry the calabresa sausage and set aside
- In a large pan, add a little of the oil rendered from frying the bacon
- Sauté the chopped onion until translucent
- Add the chopped fresh parsley and cilantro and sauté for another minute
- Add the Bahian seasoning, salt, and black pepper to taste, mixing well
- Drain the cooked beans and add them to the pan with the sautéed seasonings
- Gently stir to incorporate the seasonings into the beans
- Add the fried bacon and fried calabresa sausage to the pan with the beans
- Gradually add the cassava flour, stirring constantly, until a firm and homogeneous consistency is achieved
- Taste and adjust salt if necessary
- Serve the cowpea beans hot
