Ingredients

500 g chicken breast, cubed
1 kg potatoes
1 tablespoon butter
2 tablespoons olive oil
1 onion, chopped
6 tomatoes, chopped
1/2 bell pepper, chopped
3/4 cup green olives, chopped
2 tablespoons chopped cilantro
1 packet cream of onion soup mix
800 ml milk
3 cups cooked rice
Shredded mozzarella cheese, to taste

Where to find ingredients

Chicken breast, potatoes, butter, olive oil, onion, tomatoes, bell pepper, green olives, cilantro, milk, and mozzarella cheese are widely available at most supermarkets in the dairy, produce, and meat sections. Cooked rice can be made from scratch or purchased pre-cooked in the refrigerated or frozen sections of many supermarkets.
Cream of onion soup mix can be found in the soup aisle of most supermarkets. If you cannot find it, you can make your own seasoning blend or use a different creamy soup mix.

Preparation method

  1. Prepare the mashed potatoes by cooking the potatoes until tender, mash them with butter, and set aside
  2. In a pan, heat the olive oil and sauté the chopped onion
  3. Add the chicken cubes and brown them
  4. Add the chopped tomatoes, chopped bell pepper, chopped green olives, and chopped cilantro
  5. Cook for a few minutes
  6. In a separate bowl, mix the cream of onion soup mix with the milk
  7. Pour the cream of onion soup and milk mixture over the sautéed chicken
  8. Cook, stirring constantly, until the sauce thickens
  9. In a buttered baking dish, assemble the escondidinho
  10. Make a layer with the chicken mixture
  11. Cover with a layer of cooked rice
  12. Add a layer of mashed potatoes
  13. Finish with a generous layer of shredded mozzarella cheese
  14. Bake in a preheated oven at 180°C (350°F) for approximately 20 minutes, or until the cheese is melted and golden
