Traditional Brazilian Cuscuz: Easy and Quick Recipe

Ingredients

200 g cornmeal
2 tablespoons cassava flour
1 can sardines (in oil, drained)
1 can peas, drained
3 hard-boiled eggs
2 tablespoons chopped fresh cilantro or parsley
10 chopped black olives
5 chopped tomatoes
4 chopped hearts of palm
1 can tomato sauce
250 g shrimp, peeled and deveined
Water and salt to taste for the sauce

Where to find ingredients

Cornmeal and cassava flour can be found in the baking or international aisle of most supermarkets. Canned sardines, peas, olives, hearts of palm, and tomato sauce are standard in the canned goods aisle. Shrimp are typically found in the seafood section of supermarkets or at fishmongers. Fresh cilantro or parsley are usually available in the produce section.

Preparation method

  1. In a pot, combine chopped tomatoes, black olives, chopped hearts of palm, peas, tomato sauce, and shrimp
  2. Cook the ingredients over medium heat, adding water and salt to taste, until a dense and flavorful sauce forms
  3. In a separate bowl, mix the cornmeal and cassava flour
  4. Gradually pour the hot sauce over the flours, mixing continuously until a moist and homogeneous consistency is achieved
  5. Preheat a steamer pot
  6. Place the mixture into the steamer pot, shaping the cuscuz
  7. Garnish the top with the hard-boiled eggs and canned sardines
  8. Cook the cuscuz in a double boiler over low heat for approximately 20 to 30 minutes, or until firm and cooked through
  9. Serve hot, garnished with chopped fresh cilantro or parsley
