Preparation method
- In a large bowl, break the 2 eggs
- Add the sugar (1/2 cup) and the milk (1 cup)
- Mix well with a whisk or fork until a homogeneous mixture is obtained
- Gradually add the wheat flour (2 and 1/2 cups), stirring continuously to incorporate and prevent lumps
- The batter should be creamy and slightly thick, falling slowly from the spoon
- Incorporate the chemical baking powder (1 tablespoon) into the batter, mixing gently just until it is completely incorporated
- Do not overmix
- In a deep pan, heat a generous amount of vegetable oil over medium heat
- The oil should be enough for the fritters to be submerged
- Heat the oil to approximately 180°C
- To test, place a small piece of batter in the hot oil
- If it bubbles and rises slowly, the oil is at the ideal temperature
- Use two spoons to shape small portions of the batter
- Carefully drop the batter portions into the hot oil, frying a few fritters at a time to avoid cooling the oil and ensure they brown evenly
- Fry the fritters until golden brown on all sides
- Turn them during the process, if necessary, for an even colour
- Remove the fried fritters with a slotted spoon and place them on paper towel to remove excess oil
- In a shallow dish, mix the sugar (1 cup) with the ground cinnamon (1 teaspoon)
- Coat the still warm fritters in this sugar and cinnamon mixture
- Serve immediately and enjoy
