Homemade Black-Eyed Peas Recipe

Ingredients

1 kg black-eyed peas (purple variety)
1/2 kg fresh pork belly
1/2 kg smoked calabresa sausage
1 large onion
1 bunch fresh parsley
1 bunch cilantro
1/2 kg medium cassava flour
Complete Bahian seasoning without pepper to taste
Salt to taste
Black pepper to taste

Preparation method

  1. Cook the black-eyed peas in a pressure cooker for approximately 9 minutes after it starts to whistle, or until tender
  2. While the peas are cooking, dice the fresh pork belly into small cubes
  3. Chop the onion, fresh parsley, and cilantro
  4. Slice the calabresa sausage into rounds or cubes
  5. In a separate pan, fry the pork belly until golden brown and set aside
  6. In the same pan where you fried the pork belly, fry the calabresa sausage and set aside
  7. In a large pan, add a little of the rendered fat from frying the pork belly
  8. Sauté the chopped onion until translucent
  9. Add the chopped fresh parsley and cilantro and sauté for another minute
  10. Add the Bahian seasoning, salt, and black pepper to taste, mixing well
  11. Drain the cooked black-eyed peas and add them to the pan with the sautéed seasonings
  12. Stir gently to incorporate the seasonings into the peas
  13. Add the fried pork belly and fried calabresa sausage to the pan with the peas
  14. Gradually add the cassava flour, stirring constantly, until you achieve a firm and homogeneous consistency
  15. Taste and adjust salt if necessary
  16. Serve the black-eyed peas hot
