Sweet Coconut Ring

Ingredients

2 tablespoons (soup) natural yeast or 2 tablets of 15 g
1/2 cup (tea) sugar
2 eggs
1/2 cup (tea) butter
1 cup (tea) milk (it's faster with water, but not as tasty)
4 cups wheat flour
1 pinch salt
250 ml milk
100 g sugar (you can add more as it's not very sweet)
3 egg yolks (strained)
25 g cornstarch
1/2 tablespoon vanilla
200 g moist coarse grated coconut

Preparation method

  1. Dissolve the yeast in the sugar until it forms a paste and follow the order of the ingredients listed above
  2. Knead well and let rest for 5 minutes
  3. Make a roll and cut into 2 halves
  4. Roll out one half of the dough (leaving 5 mm thickness)
  5. Press the edges of one side of the dough and brush with beaten egg yolk to glue later
  6. Cook the milk, sugar, cornstarch, and vanilla until it forms a slightly runny pudding
  7. Add the coconut after removing the pudding from the heat
  8. Set aside
  9. Fill the rolled-out dough with the coconut filling
  10. Roll up like a Swiss roll and glue the edges with the part brushed with beaten egg yolk
  11. Cut the Swiss roll into slices (about 7 slices, 5 cm wide)
  12. Place the slices lying down in a greased and floured round pan with a hole, with a 0.5 cm distance between them
  13. Let the dough rest for 20 minutes while the oven heats up
  14. Brush the rings with egg yolk to brown
  15. Hot oven for about 30 minutes
  16. Unmold while hot
