Easy Homemade Vegetarian Meatballs

Ingredients

100 g breadcrumbs
200 g raw grated carrot (coarse grater)
200 g raw grated chayote (coarse grater)
100 g onion
10 g chopped parsley
10 g margarine, melted
Salt to taste

Where to find ingredients

Most standard supermarkets will carry breadcrumbs, carrots, onions, parsley, and margarine in their respective produce and baking aisles. Chayote (also known as mirliton or christophine) can often be found in the produce section of larger supermarkets, or more reliably in Latin American or international food markets. If chayote is unavailable, zucchini or even cooked and mashed potatoes can be used as a substitute.

Preparation method

  1. In a bowl, mix the grated carrot and chayote, chopped onion, chopped parsley, breadcrumbs, and salt
  2. Add the melted margarine to the mixture and incorporate until you get a homogeneous dough that can be molded
  3. With lightly greased hands, shape small balls with the dough
  4. Arrange the meatballs on a greased baking sheet
  5. Bake in a preheated oven at 180°C (350°F) for approximately 20-30 minutes, or until golden and firm

Observations

Vegetarian meatballs are a delicious and versatile option to incorporate more vegetables into your diet. This recipe uses grated carrots and chayote, which provide moisture and a slight sweetness to the mixture, combined with breadcrumbs for binding and onion for a touch of flavor. They are great for a quick snack, as a side dish, or even as a main course, especially for those looking for alternatives to meat.

The preparation is simple and does not require pre-cooking the vegetables, which speeds up the process. The meatballs are baked, resulting in a tender interior and a lightly crispy exterior, without the need for frying. Serve them warm and enjoy this healthy and nutritious snack.
