3.3 lbs cooked and shredded chicken
2 tablespoons olive oil
1 small onion, chopped
2 cloves garlic, minced
Seasoning to taste (salt, pepper, fresh herbs like parsley and chives)
3 tablespoons creamy cheese spread
1 cup water
2 cups milk
2 bouillon cubes (bacon or beef flavor)
1/2 cup cooked and mashed potato
1 tablespoon butter
2 1/2 cups all-purpose flour
Margarine for greasing the pan
2 eggs, beaten
Breadcrumbs for coating
Oil for frying

- Dip each shaped coxinha first in the beaten egg, then in the breadcrumbs
- Heat oil in a deep pan and fry the coxinhas until golden brown all over
- Remove the fried coxinhas and drain excess oil on paper towels
