Easy Homemade Coxinha Recipe

Ingredients

3.3 lbs cooked and shredded chicken
2 tablespoons olive oil
1 small onion, chopped
2 cloves garlic, minced
Seasoning to taste (salt, pepper, fresh herbs like parsley and chives)
3 tablespoons creamy cheese spread
1 cup water
2 cups milk
2 bouillon cubes (bacon or beef flavor)
1/2 cup cooked and mashed potato
1 tablespoon butter
2 1/2 cups all-purpose flour
Margarine for greasing the pan
2 eggs, beaten
Breadcrumbs for coating
Oil for frying

Where to find ingredients

Chicken, onions, garlic, potatoes, eggs, flour, butter, and oil are standard supermarket staples. Look for them in the produce, dairy, pantry, and cooking oil aisles. Olive oil is usually found in the oils and vinegars section. Salt, pepper, and other common seasonings are in the spice aisle. Bouillon cubes can be found in the international foods aisle or the soup/broth section of larger supermarkets. Creamy cheese spread is typically in the dairy or deli section. Breadcrumbs are usually in the baking or pantry aisles.

Preparation method

  1. For the filling, heat the olive oil in a pan and sauté the chopped garlic and onion
  2. Add the shredded chicken and seasonings, cooking for approximately 5 minutes
  3. Remove from heat, stir in the creamy cheese spread, and set the filling aside
  4. In another large pan, combine the water, milk, bouillon cubes, mashed potato, and butter
  5. Bring to a boil
  6. Add all the all-purpose flour at once, stirring vigorously until the dough pulls away from the bottom of the pan
  7. Transfer the dough to a lightly greased clean surface
  8. Knead the dough until it is smooth and let it cool slightly
  9. Open portions of the dough in your hands, place a portion of the filling, and shape into a coxinha (teardrop) form
  10. Dip each shaped coxinha first in the beaten egg, then in the breadcrumbs
  11. Heat oil in a deep pan and fry the coxinhas until golden brown all over
  12. Remove the fried coxinhas and drain excess oil on paper towels
