Ingredients

1 kg chicken breast, cut into cubes
4 large onions, sliced
1 small onion, chopped
10 cloves garlic, crushed
1 kg cassava (aipim/mandioca)
2 tablespoons dendê oil
200 ml coconut milk
1/2 liter white cachaça
2 tablespoons olive oil
4 tablespoons tomato sauce
1 liter chicken broth
Salt to taste
Black pepper to taste
Chopped parsley for garnish

Preparation method

  1. Peel the cassava and place it in a large pot, preferably earthenware
  2. Make a layer of sliced onion over the cassava
  3. Season with salt and cover with chicken broth
  4. Cook over low heat until the cassava is well cooked
  5. Remove the cassava from the heat and mash while still hot
  6. Reserve the cassava cooking water
  7. In another large pot, sauté the crushed garlic with the chopped onion in olive oil
  8. Add the cubed chicken and sauté well until golden
  9. Add 4 tablespoons of cachaça and let the alcohol evaporate completely
  10. The remaining cachaça (half a liter) will be used in the cooking
  11. Mix the dendê oil, tomato sauce, and chicken broth into the sautéed mixture
  12. Season with salt and black pepper to taste
  13. Lower the heat and cook until the chicken is cooked through
  14. Remove the chicken pieces and set aside
  15. Return the pot with the chicken cooking broth to the heat
  16. Add the mashed cassava and coconut milk to the broth
  17. Cook over low heat, stirring constantly, for about 10 minutes, until a thick cream is obtained
  18. Add the reserved chicken pieces to the cassava cream and heat through
  19. Turn off the heat and mix in the chopped parsley
  20. Transfer the chicken bobó to a serving dish and serve hot
