2 kg large shrimp with shells (or 1 kg peeled)
Juice of 2 white limes
Salt to taste
5 cloves garlic, minced
1 small can of extra virgin olive oil
2 medium onions, chopped
4 tomatoes, peeled, seeded, and chopped
1 ½ tablespoons annatto powder
1 box (520 g) tomato sauce with parsley and basil flavor
2 tablespoons powdered beef flavor seasoning
15 basil leaves, chopped
200 g butter
250 g cream cheese
1 can (approx. 300g) table cream
2 tablespoons cornstarch
2 bunches cilantro, chopped
2 bunches green onions, chopped

Annatto powder is available in Latin American or international food sections of supermarkets. Olive oil, butter, cream cheese, table cream, tomato sauce, cornstarch, and powdered seasoning are widely available at supermarkets.
Preparation method
- Wash the shrimp well and let them marinate in lime juice and salt for about 20 minutes
- Then, wash the shrimp again and drain them completely
- In a large pot, sauté the minced garlic in olive oil until it starts to brown
- Add the chopped onion, annatto powder, and chopped tomato
- Cook until the onion begins to wilt
- Incorporate the tomato sauce, powdered seasoning, and chopped basil, mixing well
- Add the butter and shrimp to the pot
- Cook over low heat for approximately 30 minutes, stirring occasionally
- Add the cream cheese and stir in the pot for about 10 minutes, until the cream thickens
- If the cream does not reach the desired consistency, dissolve the cornstarch in a little of the broth removed from the pot and add it back to the mixture, cooking for another 3 minutes
- Add the chopped cilantro and green onions
- Two minutes after adding the herbs, turn off the heat and incorporate the table cream
- Stir gently until a homogeneous cream is obtained
