Ingredients
1 whole chicken cut into medium pieces
2 cups (240g) rice
1 large onion chopped
3 cloves garlic minced
1/2 green bell pepper chopped (optional)
2 peeled and seeded tomatoes chopped
1/4 cup (60ml) chopped fresh herbs (parsley and chives)
1/2 teaspoon ground saffron or 2 sachets of ready-made powder seasoning with saffron (for color and flavor)
Salt to taste
Black pepper to taste
4 tablespoons oil or olive oil
4 cups (960ml) hot water
2 cups (240g) rice

- Check if the chicken is well cooked
- Turn off the heat, stir in the chopped fresh herbs
- Let the galinhada rest covered for 5 minutes before serving
