Preparation method
- Carefully remove the husks from the corn ears
- Reserve the most beautiful and intact husks for making the wrappers
- Cut the corn kernels off the ears using a sharp knife
- Place the kernels in a blender and blend well until you obtain a pureed mixture
- Add the milk to the blended corn and process again until the mixture is homogeneous
- Pass this cream through a coarse sieve to remove excess fiber
- Transfer the sieved cream to a bowl
- Incorporate the salt, sugar, and grated cheese into the mixture, stirring well
- Wash the reserved husks under running water
- Shape small forms (pouches) with the husks
- Distribute the corn cream inside each husk pouch
- Close the pamonhas by folding the ends and tie firmly with kitchen twine
- Place the pamonhas to cook in a pot with boiling water
- Cook for approximately 10 minutes
- Remove from the water, let drain, and serve hot or at room temperature
