Traditional Galinhada: Delicious Homemade Recipe

Ingredients
1 whole chicken cut into medium pieces
4 tablespoons oil or olive oil
Salt to taste
Black pepper to taste
1 large onion chopped
3 cloves garlic chopped
1/2 green bell pepper chopped (optional)
2 tomatoes peeled and seeded, chopped
1/2 teaspoon saffron powder or 2 sachets of ready-made powdered seasoning with saffron
2 cups rice
4 cups hot water
1/4 cup chopped fresh herbs (parsley and chives)

Preparation method

- Check if the chicken is well-cooked
- Turn off the heat, mix in the chopped fresh herbs
- Let the galinhada rest, covered, for 5 minutes before serving
