Traditional Creamy Brazilian Vatapá

Ingredients

70g smoked dried shrimp
250g white fish fillets
Salt and black pepper to taste
1/2 onion, sliced
1 peeled tomato, diced
1/2 cup chopped green bell pepper
2 tsp ground coriander
1 tsp red pepper flakes
20 mL lime juice
3 tbsp palm oil
1/2 cup roasted cashew nuts
1/2 cup shelled and roasted peanuts
1 tsp grated ginger
2 slices white bread, crusts removed, soaked
1/2 cup coconut milk
1/2 cup water

Preparation method

  1. Soak the dried shrimp in water to remove excess salt
  2. Roast the peanuts and remove the skins
  3. Season the fish fillets with salt and pepper and set aside
  4. In a pot, heat half of the palm oil and sauté the onion, tomato, ground coriander, and bell pepper
  5. Arrange the fish fillets over the sautéed vegetables
  6. Cook for about 5 minutes
  7. Sprinkle with red pepper flakes
  8. Drizzle with lime juice and the remaining palm oil
  9. Cover the pot, place over medium heat, and cook until the fish is tender
  10. Remove the fish from the sauce and flake it into small pieces, reserving the sauce
  11. In a blender or food processor, add the drained dried shrimp, cashew nuts, roasted peanuts, grated ginger, soaked bread, coconut milk, and water
  12. Process the mixture until a homogeneous paste is obtained, but with a slight texture, do not over-grind
  13. Gently mix the processed paste into the reserved sauce in the pot
  14. Place over low heat, stirring constantly, until the characteristic creamy consistency of vatapá is achieved
  15. Incorporate the reserved fish pieces into the mixture
  16. Adjust salt and pepper, if necessary
  17. Serve hot
